Meals by Me

I have been asked how can I enjoy eating and eat well? so I decided to post some of my favorite things from meals to snacks. I am on a no wheat no dairy diet (exception some cheese). I LOVE cooking so I am more than happy to share my passion for food and fitness with you!

For the cereal addict

If you enjoy cereal as much as I do. Cutting it out of my diet, I was worried would be very hard. Especially because I felt a bowl of cereal started my day right! Here is how I was able to enjoy a healthy Cereal and feel even better in the mornings!

1 1/2cups of frozen berries warm them up
add 2tbsp of flax seed
and either raw almonds or walnuts. I use 10 almonds (70cals) you can adjust you calories for breakfast based on the amount of nuts you add.
then I add about a 1/4cup of natural almond milk to cool berries slightly.
Total cal : 320cal approx.
Sometimes if I feel I need more protein I will have a boiled egg


A Dinner/Lunch for the Pasta lover

Spaghetti squash with lemon dill sole fillet
bake the spaghetti squash usual time 45min
while that is cooking add the sole fish to frying pan (each fillet was 70cals) I add 2 cloves of garlic, tsp of lime and a tsp of lemon juice. I drizzled a little soy sauce over the fish  and add dill all over, and let simmer until cooked.
Once squash was cooked I took 1 1/2cup of spaghetti squash and a 1tbsp of tomato pesto (one scoop was 90cal watch the amount of pesto added) then added fish and mixed all together. This was a very tasty dish!
total cals : 250-400cal based on amount of pesto fish and squash you desired!
